Cooking on a budget doesn't have to always mean frozen food or take - away pizzas.  Get your cook on and try these healthy, low cost options. 

Under a fiver 

Omelette

Ready in 10 minutes

Serves 1 

Ingredients 

  • 2 eggs 
  • Drop of milk (1Tbsp) 
  • Butter or margarine - 10g

* Inside filling of your choice.  (mushrooms, onions, bacon, peppers are all popular)

Instructions 

  • Mix 2 eggs together and add in a drop of milk - Season with salt and pepper.
  • Heat a little butter/marg in a frying pen on a low heat.  Once melted add the egg mixture.  After a minute, turn the heat down and then add your filling. 
  • Allow 2 - 3 minutes for the omelette to set underneath and wait for 2 minutes.
  • Flip the omelette and then serve. 

Beans on toast with a twist 

Ready in 10 minutes 

Serves 1 

Ingredients

  • Can of baked beans 
  • Couple of slices of bread 
  • Low fat butter 
  • Egg or tomatoes for the twist!

Instructions 

  • Toast your bread. At the same time, cook your beans in a pan for a couple of minutes - watch you don't burn your beans. 
  • Once the bread has toasted, add the cooked beans.  For the twist add some melted cheese, cherry tomatoes or put a fried egg on top!

Chicken Stir Fry

Ready in 10 minutes 

Serves 4

Ingredients 

  • 2 skinless chicken breasts 
  • 1 red pepper, thickly sliced
  • 1 red onion, thickly sliced
  • Packet of egg noodles 
  • 1 garlic clove
  • Soy sauce and/or sesame oil or Chinese cooking sauce of your choice 
  • Add vegetable of your choice

Instructions 

  • Heat a little oil in a frying pan or wok on a low heat.
  • Add your chicken and garlic and cook on a low heat for around 10 mins.
  • Make sure the chicken is cooked through - tip cut a bit and make sure it's white throughout. 
  • Add a tbsp of soy sauce and/or tbsp of sesame oil or add in your Chinese sauce of choice. 
  • Cook for a couple of mins and then add in your noodles. 
  • Mix through and serve.

Spaghetti Bolognese

Ready in 40 mins 

Serves 2-3

Ingredients 

  • Spaghetti
  • 1 white onion - diced 
  • 1 clove of chopped garlic 
  • 500g of lean mince beef/turkey/Quorn
  • Handful of chopped mushrooms 
  • 400g of chopped tomatoes

Instructions 

  • Boil some water, add a pinch of salt and add your pasta - cook for 10 mins.
  • Heat your mince on a low heat - you can choose to add a spot of oil or cooking spray if required.
  • Keep stirring until the mince is golden brown and the juice runs out of it. 
  • Drain your mince.
  • Put your mince back on a heated pan and gradually add your onion, garlic, mushrooms and chopped tomatoes. 
  • Gently mix together and leave it to sit on a low heat for 10 mins - this way the flavours will come together so you get the tastiest dish.
  • Empty the water from the spaghetti and mix the 2 pans. 
  • Grate some cheese on top then serve.
