Xmas Recipe: Turkey Fajitas in Lifestyle

So you’ve got some turkey leftovers but don’t fancy another reheated roast dinner? Check out this simple recipe!

Since you’ll be making the guac from scratch, you can keep a tub of this in the fridge for a handy midnight snack for dipping crisps or bread sticks into!

First off, you’ll start making the guacamole.

Pop the avocados, garlic, lime juice, chilli and coriander all together into a bowl and mash it all up, just like you would with tatties! It can be tricky to mash cloves of garlic, so try crushing them first using the back of a spoon or, being careful, the flat side of a knife. Cover this and set aside.

To heat up the filling, add a dash of oil to a hot pan and soften the onion and peppers for a few minutes. Add the paprika, ground coriander and tomato purée as needed and cook for a few minutes more, stirring everything to make sure it doesn’t burn.

Next, add your leftover turkey to the pan to heat up with the spices, peppers and onions.

Whilst the meat is warming, heat the tortillas in the oven for a couple of minutes.

All you need to do now, is make sure everything is turned off, pop the filling into a serving bowl and take all the ingredients to the table, allowing everyone to make their own fajitas – a perfect Boxing Day treat!

What you will need

  • Leftover cooked turkey, cut into small strips

  • 8 flour tortillas

  • 200g pot salsa

  • About 40g Cheddar cheese, grated

  • 8 tsp soured cream (optional)

  • 2 ripe avocados, peeled and stoned

  • 1 red onion, peeled and thinly sliced

  • 2 red, orange or yellow peppers, deseeded and thinly sliced

  • 1 clove garlic, peeled and finely chopped

  • Good squeeze of lime juice

  • Pinch of chilli flakes or ½ red chilli, deseeded and finely chopped

  • Large handful fresh coriander, chopped (optional)

  • 2 tbsp olive oil

  • 2 tsp paprika

  • 2 tsp ground coriander

  • 2 tbsp tomato purée

  • To serve, lime wedges
