Caribbean Bananas 

Here's a quick and tasty Caribbean recipe for you to have a go at. All you need ingredients wise is some bananas, honey, and coconut.

Cut 4 to 10 inch squares of foil and grease the centre of each with butter.
Peel the bananas, put one on one end of each piece of foil and divide the honey and coconut between them.

Fold over the foil and double seal all around the three open edges, leaving plenty of air space between the banana and the top layer of foil. The parcels should look like little fat cushions.

Cook the foil parcels in a large pan of boiling water in a steamer for 40 minutes.

Caribbean Avocado

Ingredients

2 tablespoons of butter
1 1/2 tablespoon of tomato paste
1 tablespoon of water
1 tablespoon of wine vinegar
1/4 teaspoon of salt
1/2 teaspoon of dry mustard
4 whole cloves
2 drops hot sauce
1 tablespoon of pickapeppa sauce
1 tablespoon of sugar
3 ripe avocados, chilled

How to make the dish

  • Combine all ingredients (except avocados) in a small saucepan.
  • Bring to a boil stirring constantly.
  • Reduce heat, cover and simmer 15 to 20 minutes.
  • Remove whole cloves.
  • Cut avocados in half, remove seeds, immediately before serving to avoid discoloration.
  • Discard seeds.
  • Place avocados in small dishes and spoon sauce into bowl.
